Incredible bakeryThe Incredible Bakery is run by Valeria Mizuno-Turner and her husband, inspired by a need to create food for their four year old son Leon who is gluten, dairy, egg, soya and peanut allergic. Two years ago they gave up  their jobs in the city of London to open the Incredible Bakery in a tiny village in Northamptonshire, since when they have been going from strength to strength. Just this month their Incredible Onion Panini (pictured) won the 'FreeFrom Bakery Product of the Year' at the Baking Industry Awards 2015!

Everything they bake is free of all of the 14 major allergens meaning that all of their breads and cakes are gluten, dairy, egg, soya and nut free. And Valeria sent a huge box of their goodies for us to taste, including a gluten-free oat loaf; a golden linseed loaf; a mini red quinoa loaf; a goji berry, coconut and raisin loaf;  a ginger, date and chocolate loaf; an onion and seeds loaf; a whole range of panini; some chocolate, lemon and  ginger muffins and slices and some burger buns.

Most of Valeria’s breads are based on gram flour and brown and white rice flour and however she does it, she manages to create a really soft loaf which holds together well, is delicious out of the packet (very slightly bitter if eaten totally on its own but once ‘buttered’, ‘jammed’ or made into a sandwich, just fine) and very tasty toasted.

The Incredible Golden Linseed Loaf ingredients: water, gram flour, white and brown rice flour, potato starch, tapioca starch, golden linseed, cold pressed rapeseed oil, stabiliser: xanthan gum, yeast, unrefined sugar and sea salt.

The paninis looked rather delicious. They were simple to heat up, particularly as you can cook them directly in their packaging. For coeliacs, this will be perfect to prevent contamination. For lazy people, it will be perfect to prevent washing up a baking tray.

Heated up, they were really tasty with a little butter alongside a bowl of soup, and have a slightly cakey texture. We followed the baking instructions to the letter but they weren't heated through; we'd advise baking them for longer than directed. The only niggle is with the toppings; we'd like the flavours distributed more evenly through the dough rather than just plopped on top. The panini was shortchanged with its seeds, meaning there were lots of doughy bites without the promised pumpkin and sesame seeds. Similarly, the sundried tomatoes could also be chopped more finely and distributed throughout.

The Incredible Onion Panini ingredients: water, gram flour, gluten free oats, white and brown rice flour, potato starch, tapioca starch, cold pressed rapeseed oil, onion, stabiliser: xanthan gum, calcium carbonate, citric acid, methylcellulose, yeast, unrefined sugar and sea salt.
